I performed my first low carb cooking demonstration and showed the world the wonders of the mock danish. Mock danishes were one of the new comfort foods that I learned how to cook and was used to kill cravings that threatened the diet early on. Some qualifications for Kent’s comfort foods were it had to be both easy and quick to make, and it could not have a lot of ingredients to prep.     I just bought the ingredients and made it.. It tastes good! I think I used too much butter though because it made it a little salty so I had to add more splenda x-D

    Yes, but some of the ingredients are limited (cheese, flax, sweetener). You can therefore have a maximum of 1 per day on Induction.

    I have been looking at the picture of this “mock” danish for weeks…….No offense Kent, but the pics do not bring thoughts of sugar plums to my head….But I finally broke down and tried it and OH MY GOODNESS, IT WAS AMAZING!!! Texture of BREAD….sweet BREAD….and so yummy…like a BUTTERY CINNAMON ROLL….

    Hi Kent, thank you for posting this video! I tried the mock danish and it was quite good. I also visited Linda’s Low Carb. I’m on day 2 of my diet and I have already lost 1.5 pounds. These recipes will make this diet much easier! Thanks for sharing : ) .

    Hey Kent, that sweetener is Altern. Exactly the same thing as Splenda, but cheaper! Another fine alternative available at Walmart!

    It isn’t necessarily crunchy as texture more like bread and less like a custard. I would add it first for the fiber and then second for the texture. The third reason would be for the Omega 3 (or 6?) fatty oils, which are good for the body as well and cholesterol. I hope this helps.

    Does the ground flax meal make it a little crunchy? I have some flax SEEDS, so I guess I’ll hae to put them into the food processor. I’ve never used flax before–this would be my first time. So I was wondering why you added it–for the crunch, for the flavor, or for the fiber benefit? Or for all 3 maybe??

    Yes, Cream cheese is allowed up to 3 oz. Eggs of course are allowed, and the rest are spices. Just be sure to count this against your daily sweetener limit.

    I bought mine off Ebay — but you have to pay attention to the Splenda concentration. Some are lesser concentrated like Fiberfit than the drop = 1.5 tsp like sweety brand. That is the cheapest place I have found it.

    The sweety website is also the most popular place to buy it.
